Why we meditate by Daniel Goleman(he of Emotional intelligence fame) and Tsoknyi Rimpoche.
Tsoknyi writes about each aspect of mindfulness and meditation based on his own learnings with plenty practical examples to build into your own practice. Some of his writing is hard to access, it's quite at top level of the Buddhist mountain whereas Daniel writes personally and adds in research. I felt Daniel's sections were easier for a beginner to grasp.
